One of my favorite first memories of going out to restaurants with my family, included hearing people order fajitas. They would come out, sizzling on a skillet for special presentation and the smells would waft through the entire restaurant. This dish is just as satisfying as a restaurant special with a side of some nutrient rich brown rice, but minus the tortillas.
